INGREDIENTS:
Chicken breast
Beef bacon (or regular bacon) - Winco sells beef bacon
Spinach
Quinoa
Avocado
Feta
Cherry tomato
Green pesto
Olive oil
Salt & pepper &
1-2 Poached eggs

Cook quinoa - it really expands. It’s double the water as the quinoa. 1 cup made a ton more than I thought it would. I only needed like 1/4 cup. Good to know but now I have extra.
Fry the Beef Bacon - doesn’t need any oil or anything. Or you can cook it in the oven at about 350°, which I may try next time.
Poach the egg - heat up the water to boiling, crack and egg and put it in a small bowl, spin the water so when you put the egg in, it kind of sticks to itself instead of going everywhere. Some people put some vinegar in the water I believe. I want an egg poacher to avoid all this, but still good to know how to do without. It’s goof for ya. Lol
Add all the other stuff to taste - I forgot to add the quinoa til the end so my picture doesn’t look the extra most bestest, but who’s judging. ;)
I tried this at Bramble years ago in 2021 and it made an impression on me and here I am 3 years later making it myself! It tastes so similar! Kind of surprising! Thank you to my sister in law Danielle (who is about to have a baby) for letting me try her quinoa bowl. I think she ordered it. So sweet.
